Join us on this unique gastronomic experience and have a great day in the mountain town of Cayey and La Ruta del Lechon for a dish of yummy roast pork.  Enjoy the flavor that locals do over the weekend when you can join them and head to the famous lechoneras in Guavate. Lechoneras are outdoor restaurants that specialize in seasoned whole-pig, slow roasted over an open fire. This makes the pork flavorful and delicious. The pig is mounted on a “varita”, a bar usually made of steel, slits are made into the meat and seasoning inserted.  The animal is slowly roasted and turned from 6 to 8 hours over charcoal, then hoisted into the window of the lechonera for all to see.  If you are wondering about the taste is a combination of slightly smoked juicy pork and crunchy toasted skin which we call “cuerito”.  There can be a dizzying array of side dishes at the restaurant, but since virtually all lechoneras serve cafeteria-style, you can just point to something that appeals to you and it will be served on your plate. This is your chance to taste various native side dishes like rice and pigeon peas, cassava, breadfruit, sweet potato, blood sausage, and yellow or green plantains. Of course, besides the delicious pork, there are turkeys and chickens cooked and seasoned in a similar way. Those are really good, too! And not only is the food a draw, but also the live music that get people dancing and singing and the cool mountain air.
